Sneak peak: favorite holiday recipes


I can’t be alone when I admit one of the best parts about this season is the timeless holiday recipes, right? This time of year is filled with amazing confectionery skills of neighbors, friends, and family, and I think it is so much fun! I’m no kitchen goddess, so I’m filled with wonder at what my sisters and aunties create. 

Today, I’m going to share a couple of oldie but goody recipes that have allowed me to contribute to the holiday goodness with ease, along with one that works wonders any time of year.

Are you ready? 

Hot Spiced Wine

A quart dry red wine (no need for fancy or expensive wine, ’cause we’re gonna spice it up)
A cup water
1 cup sugar
1 teaspoon whole cloves
1 cinnamon stick
1/2 orange, sliced

Bring to a boil. Simmer 15 minutes. Serve in a mug or sturdy wine glass.

Holiday recipes

Sweet Potato Casserole* ?(dairy free)

2 pounds sweet potatoes
1/4 cup coconut milk
2 large eggs, lightly beaten
1 tsp vanilla extract
1 tablespoon coconut oil or buter
2 teaspoons cinnamon
1 teaspoon nutmeg
1 teaspoon lemon zest
Salt and pepper, to taste
1+ cup chopped pecans

Peel sweet potatoes and cut into cubes. Place in large pot, cover with water, and boil until very tender.
Preheat oven to 350 degrees>
Drain potatoes and return to pot. Using a handheld mixer, blend in coconut milk. 
Add eggs, vanilla, oil or butter, cinnamon, nutmeg and zest.
Place mixture into 9″ x 9″ Pyrex pan. 
Sprinkle crushed pecans on top.
Bake 30 minutes or until golden brown on top.
